Sundays are for Pancakes

Anyone who knows me knows that I have an obsession with pancakes.  I am extremely picky about my pancakes and never use box mixes, only homemade recipes!  While living in Denmark I was able to try lots of amazing recipes from local families that were kind enough to feed me and my companions.  I'm not a big maple syrup fan so I use nutella, cinnamon/sugar, or buttermilk syrup on my pancakes.  In the year and a half that I lived in Denmark I gained 40 pounds!! Horrific I know haha and I contribute 20 of those pounds to pancakes and nutella :)  Just remember everything in moderation!  I hope you enjoy these favorite recipes of mine with the ones you love most!  XO Allison

Skinny Pancakes

Ingredients:

1 cup milk

1 cup flour

4 eggs

3 tablespoons butter

2 tablespoons cottage cheese or greek vanilla yogurt

1 teaspoon vanilla

3 tablespoons sugar

dash of salt

 

Blend all ingredients together in blender until well combined.  Turn on skillet to medium heat.  Thoroughly coat skillet with butter then add 1/4 cup batter and turn skillet to even coat the pan in thin layer of batter.  Allow to cook until edges begin to golden.  Flip pancake and cook for 30 seconds.  Remove pancake and enjoy!
