Perfect Pina Colada 

1/2 cup chopped fresh pineapple
3 ounces (6 tablespoons) silver or white rum
1 1/2 ounces (3 tablespoons) fresh lime juice
3 ounces (6 tablespoons) cream of coconut
2 ounces (1/4 cup) pineapple juice
3 cups ice
1/2 ounce (1 tablespoon) black strap rum (optional)
Garnishes: fresh pineapple spears, mint leaves

Combine first 6 ingredients in a blender. Blend on high until smooth. Pour mixture
into 2 tall glasses. Top each with 1/4 ounce (1 1/2 teaspoons) black strap rum, if
desired. Garnish, if desired.

Sparkling Watermelon Cooler

4 Cups Watermelon, Cubed
2 Limes
1⅓ Cups Ginger Ale
3 Oz Gin (Optional)
Additional Lime Wedges For Garnish, If desired

Puree your watermelon using a blender or mortar and pestle; strain out pulp. Fill glasses with crushed ice. Pour ~ ½ cup of watermelon juice into each glass and squeeze the juice of one lime into each glass. Add ~1/ ½ ounces of gin to each glass if desired. Then pour in ¾ cup ginger ale. Stir well. Garnish with lime wedges if desired.

Mojito

10 fresh mint leaves
1/2 lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 1/2 fluid ounces white rum
1/2 cup club soda

Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
